ひともじぐるぐる

□熊本県□
「ひともじぐるぐる」というおもしろい名前の熊本県の
郷土料理。
「ひともじ」はねぎのことで、わけぎの一種だそうです。
私は最初、地名だと思っていました。
ひともじ（ねぎ）を芯が残るくらいにゆで、
白い部分を芯にして、青い葉をぐるぐる巻いて、
からし酢みそをつけて食べるもの。
からし酢みそは、赤酒（糖分が多く含まれる清酒で熊本の名産）を加えます。
約２００年以上前、肥後藩主細川重賢が、財政を立て直すための一つとして、
特に贅沢だった酒の肴に、安くて美味しいものを、と呼びかけ
「ひともじぐるぐる」が考案され、今に至るそう。
シンプル！これなら、安あがりで、見た目も悪くないし、よく考えたもんだなぁ。
ぐるぐる巻いた葉の中が、トロッとしていて、からし酢味噌とあっていました。
酒の肴に、身体もいたわりつつ…。
