あく巻き

鹿児島県で昔から作られている保存食です。地元の人は「ちまき」と呼んでいます。
もち米を、木や竹を燃やした灰汁に一晩つけたあと、竹の皮に包み、灰汁の中で５時間以上煮て作ります。出来上がったアク巻きは輪切りにして、きな粉や砂糖をかけてわらび餅みたいにして食べます。
私が食べたのは鹿児島県の友達のおばあちゃんの友達の手作りです。
作るとなると一気に、ものすごーく大きな釜で大量のあく巻きを作るそうです。かなり暑い日だったのですが、常温のまま５日ほど放置していたら、竹の皮にうっすらカビがはえてきたー。でも、おばあちゃんによると、中は全然大丈夫とのこと。おそるべし灰汁。気になる味は、わらび餅ふうだけど、もっちり、どっしり、歯ごたえがあり、美味しい。食べごたえ十分です。
灰はミネラルを含むので健康食だそう。また、灰汁の殺菌作用が保存に適している。
昔の人の知恵で生れ（かなり古い。平家の時代から）今も作られていて、美味しく、身体にもよい保存食。なんと伝統ある優れた食べものなのだろう。
