○モッツァレラチーズと夏野菜のハーブサラダ
簡単 20分以内 色とりどりの夏野菜。多めに作っておくとラクちん。
| 材料 ２人分 | |||||
| モッツァレラチーズ | ・・・・・ | 50g | にんにく | ・・・・・ | １かけ |
| なす | ・・・・・ | 1/2本 | バジル葉 | ・・・・・ | ４～５枚 |
| ズッキーニ | ・・・・・ | 1/3本 | オレガノ | ・・・・・ | 適量 |
| 黄パプリカ | ・・・・・ | 1/2個 | 胡椒 | ・・・・・ | 少々 |
| 玉ねぎ | ・・・・・ | 1/2個 | オリーブオイル | ・・・・・ | 大２ |
| トマト | ・・・・・ | １個 | 塩 | ・・・・・ | 小1/2 |
作り方
| １ | 玉ねぎ、トマト、モッツァレラチーズ、パプリカは１cm角にカット。茄子は乱切り、ズッキーニは厚めの半月切り。にんにくはみじん切り。 |
| ２ | ソースを作ります。フライパンにオリーブオイル、にんにくを入れ弱火にかけ、香りがたったら、玉ねぎを入れ、しんなりするまで中火で炒める。 |
| ３ | そこへトマトを入れ、水分を半分くらいとばし、塩胡椒を入れ冷ます。 |
| ４ | 茄子、ズッキーニ、パプリカは油で揚げ冷ます。 |
| ５ | 冷めたら、ボールにソースと野菜、モッツァレラチーズ、バジル、オレガノを加えあえる。 |
| ＊冷蔵庫で冷やして食べるとおいしい。 ＊酸味が足りない場合は、赤ワインビネガーを入れるとよい。 |
