| 白身魚（たらなど） | ・・・・・ | ２切れ | 白ワインビネガー | ・・・・・ | 大２ |
| 玉ねぎ | ・・・・・ | 1/4個 | 白ワイン | ・・・・・ | 大２ |
| にんじん | ・・・・・ | 1/4本 | オリーブオイル | ・・・・・ | 大４ |
| にんにく | ・・・・・ | １片 | 鷹の爪 | ・・・・・ | 少々 |
| 塩・胡椒 | ・・・・・ | 少々 | 小麦粉 | ・・・・・ | 少々 |
作り方
| １ | たらは、一口大に切って塩胡椒して、小麦粉をまぶし油で揚げる。 |
| ２ | 玉ねぎはスライス。人参は千切り。にんにくは、薄切り。鷹の爪は小口切り。 |
| ３ | フライパンにオリーブオイル、にんにく、鷹の爪をいれ、弱火にかけ、香りがたったら、玉ねぎ、人参を入れ軽く炒め、白ワインビネガー、白ワインを入れ火を強め、一煮立ちしたら火をとめる。 |
| ４ | 揚げたたらに（３）のソースをかけ、なじませ漬ける。さめたら完成 |
| ＊魚は、他にたい、わかさぎなど何でもよい。 |
